Sturgeon on some dinner plates

Sturgeon is a catch and release fish across most of Canada, so it’s not a common item on dinner plates.
However, the Dean of Science and Technology at VIU, Don Noakes says the University and the International Centre for Sturgeon Studies raise thousands of the fish for research purposes annually……
Because of federal and provincial laws, releasing the fish into the wild is not an option.
The fresh filets are now available in a variety of restaurants throughout the Island and mainland and it’s also being canned locally and can be purchased in local retail outlets.
