Turkey tips from the BC Turkey Farmers

Turkey producers in B.C. grow 26 million kilograms of turkey annually.
Michel Benoit of B.C. Turkey Farmers says, over the Thanksgiving Day long weekend, British Columbians will eat 3 point 5 million kilograms of turkey while at Christmas, we consume 3 point 3 million kilograms…..
Benoit says if you are in charge of purchasing the Thanksgiving turkey for dinner, you should plan for a half to one kilogram of turkey per person.
Benoit says roasting the birds, versus smoking or grilling them, is still the favoured way to cook them but how we roast them has changed….

Benoit says people are also more concerned with the wine pairings at Thanksgiving.
He suggests a rose or pinot noir.
Benoit says “oaky” wines, like Chardonnay, should be avoided.
